Cottage cheese Pancakes with lemon syrup

You probably know that saying:

When life gives you lemons, ask for tequila and salt!

Let’s skip the alcohol today. 😉

Instead I turned those lemons into a sweet and sour syrup that goes so well with fluffy pancakes made with cottage cheese!

Don’t worry! It might sound adventurous but it tastes like a classic! Get your pots and pans ready for those recipes:

Lemon Syrup

makes about 500ml

  • 240 ml lemonjuice
  • 240 ml water
  • 200g sugar
  • 1 tbsp cornstarch

 

Combine all ingredients in a little pot and bring to a boil over medium heat. Let it simmer for about 5 minutes or until it thickens. Remove from heat and pour the syrup in a clean bottle while it’s still hot.

Cottage cheese pancakes

makes about 18

  • 120g flour
  • 1/2 teaspoon baking soda
  • 1 pinch of salt
  • 4 eggs
  • 225g cottage cheese
  • 120 ml milk
  • 2 tbsp oil

Mix flour, baking soda, salt and sugar in a little bowl. In a second bowl combine eggs, cottage cheese, milk and oil. Add flour mix and stir until combined.

Heat a large pan over medium heat. Spoon little amounts of batter into the hot pan and cook from both sides. Best served with lemon syrup.
