It’s hard to believe, but today’s already the last day of my #PANCAKEAPRIL! Wow, incredible how time flies when you’re having fun! I really hope you liked my recipes, too!
But before it’s all over I have another recipe for you:
Do you like Coffee? I don’t like it. I LOVE it!! A morning without a cup of coffee feels all wrong – for me and everyone around me. I’m also one of those people who can drink a double espresso right before bedtime and still sleep like a baby.
So why don’t combine breakfast and your morning coffee: Fluffy pancakes with chocolate chips and a nice coffee flavor. Oh. So. Yummy!
Espresso Chocolate Pancakes
makes about 20 Pancakes
- 1 cup + 2 tbsp flour
- 2 teaspoons baking powder
- 2 tbsp powdered sugar
- 1 teaspoon instant espresso powder
- 1 pinch of salt
- 1 cup milk
- 2 eggs
- 1/4 cup chocolate chips
Heat pan over medium heat and add a little bit of butter.
Mix flour, baking powder, powdered sugar, espresso powder and salt. Add milk and eggs and whisk until combined. Stir in chocolate chips.
Spoon batter onto the hot griddle and cook from both sides until golden.
- 150g sour cream
- 60g powdered sugar
- 1-2 teaspoons espresso powder
Add all ingredients to a little bowl and whisk until there are no more lumps. Drizzle sauce over pancakes and serve.
They’re not only great for breakfast but also make a wonderful dessert! Just add a little bit of grated chocolate and your guests will be amazed!
