Pan Fried Asparagus And Potatoes

spring is finally here: it is pleasantly warm outside and everything grows and blooms – makes you want to spend the whole day outdoors, don’t you think? And when you come back inside after a long day you need a quick meal for your (probably) very rumbly stomach … Then this pan fried asparagus and potato dish is just right! Fast, fresh and easy peasy!

Pan Fried Asparagus & Potato

makes 2 servings

  • 400 g small potatoes
  • 200 g green asparagus
  • 2 shallots
  • 1 tbsp butter
  • 2 stems of parsley
  • Salt & pepper

Wash potatoes and cook them unpeeled in salted water for 15 minutes. Meanwhile wash the asparagus, cut off the woody ends and halve the stalks. After half of the cooking time add the asparagus to the potato and finish cooking them together. Then drain everything and allow to cool slightly.

Now cut the potatoes into wedges and the asparagus into about 3 cm long pieces. Peel, halve and roughly slice the shallots.

Heat the butter in a large frying pan and fry the potatoes on medium heat for about 5 minutes until golden brown. Meanwhile, wash and chop the parsley.

Add the shallots to the potatoes and fry for 4 minutes, then mix in the asparagus and fry for another 2 minutes, turning over repeatedly. Season with salt, pepper and parsley and serve.

This dish tastes great on its own, but of course you can also serve it as a very delicious side.
